Aloo curry is one flavorful dish which goes well with poori, kachori, chapati or even with rice. Potatoes are cooked in a spicy, aromatic tomato curry. This aloo sabzi is very popular on the streets of North India. Mainly in Banaras, Mathura ke dubki waale aloo or you can also find this sabzi on the streets of Chandni Chowk, Delhi. I am a potato fan and this aloo curry recipe is really close to my heart. The memories of having poori & aloo sabzi go back in time when I was a ghost traveler (night traveling) and hooked up to poori aloo sabzi at Asansol and Gorakhpur stations. Follow this recipe and learn how to make mouth watering truly delicious street style aloo sabzi. You can enjoy this sabji in breakfast/lunch or in dinner.

Ingredients for Recipe

  • 4 medium boiled potatoes
  • 4 tbsp oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • 1/8 tsp asafetida (hing)
  • ¼ carom seeds (ajwain)
  • ¼ nigella seeds (kalongi)
  • Some curry leaves
  • 2 medium chopped tomatoes
  • 1 inch chopped ginger
  • 3 cloves of garlic
  • 3 soaked dry red chili
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp kashmiri red chili powder
  • 30 grams cilantro leaves
  • Salt to taste
  • 600 ml water

Recipe Method

Step 1

Heat pressure cooker on medium heat, add 4 tbsp oil. In hot oil add ¼ tsp mustard seeds, ¼ tsp cumin seeds, 1/8 tsp asafetida (hing), ¼ carom seeds (ajwain), ¼ nigella seeds (kalongi), some curry leaves. Let them splutter.

Step 2

Add 2 medium chopped tomatoes, stir well for a min then add ginger, garlic and soaked red chili paste. Sauté for a min and add 1 tsp turmeric powder, salt to taste. Mix well and close the pressure cooker and let it cook for 3 minutes. Turn off the stove after 3 minutes release pressure and open the lid.

Step 3

Turn on the heat on medium again. Add 1 tsp coriander powder, ½ tsp garam masala, ½ tsp kashmiri red chili powder. Mix everything well and add four medium boiled and chopped potatoes. Coat potatoes well with all the spices and sauté for 2 minutes. Add 600ml water, stir well. Adjust the heat on low medium and cover the lid. Now let it simmer for 5 minutes.

Step 4

Turn off heat and add freshly chopped cilantro (coriander) leaves. Hot spicy street style aloo curry is ready to serve. Enjoy this aloo sabji with moong dal kachori, paratha, chapatti or rice.
