Aloo Curry Lunch Recipe Ingredients
- 4 medium boiled potatoes
- 4 tbsp oil
- ¼ tsp mustard (rai) seeds
- ¼ tsp cumin(jeera) seeds
- 1/8 tsp asafetida (hing)
- ¼ carom seeds (ajwain)
- ¼ nigella seeds (kalongi)
- Some curry leaves
- 2 medium chopped tomatoes
- 1 inch chopped ginger
- 3 cloves of garlic
- 3 soaked dry red chili
- 1 tsp coriander(dhaniya) powder
- ½ tsp garam masala Buy it here
- ½ tsp kashmiri red chili powder
- 30 grams cilantro (dhaniya) leaves
- Salt to taste
- 600 ml water
How to Make Aloo Curry Recipe
Step 1
Heat pressure cooker on medium heat, add 4 tbsp oil. In hot oil add ¼ tsp mustard seeds, ¼ tsp cumin seeds, 1/8 tsp asafetida (hing), ¼ carom seeds (ajwain), ¼ nigella seeds (kalongi), some curry leaves. Let them splutter.
Step 2
Add 2 medium chopped tomatoes, stir well for a min then add ginger, garlic and soaked red chili paste. Sauté for a min and add 1 tsp turmeric powder, salt to taste. Mix well and close the pressure cooker and let it cook for 3 minutes. Turn off the stove after 3 minutes release pressure and open the lid.
Step 3
Turn on the heat on medium again. Add 1 tsp coriander powder, ½ tsp garam masala, ½ tsp kashmiri red chili powder. Mix everything well and add four medium boiled and chopped potatoes. Coat potatoes well with all the spices and sauté for 2 minutes. Add 600ml water, stir well. Adjust the heat on low medium and cover the lid. Now let it simmer for 5 minutes.
Step 4
Turn off heat and add freshly chopped cilantro (coriander) leaves. Hot spicy street style aloo curry is ready to serve. Enjoy this aloo sabji with moong dal kachori, paratha, chapatti or rice.
